OneBayshill Road’s open kitchen, The Larder, is set to cause quite a stir with the delicious fresh seasonal dishes and artisanal produce managed by Cheltenham catering company Canape to Cake.
We caught up with Hetty, one of the founders, in between the weddings and private dinner parties she and business partner Lucie expertly cater, to ask about their inspiration for Canape to Cake and what culinary delights Cheltenham can look forward to:
How did Canapé to Cake come together?
The idea for our catering business was ﬁrst born when I was on maternity leave so couldn’t work in a professional kitchen due to bringing up a young family. However, with a desire to learn more about the trade, I returned to college to master the art of sugar craft and master wedding cakes.
Having previously worked with Lucie, who oversaw the front of house operations, while I was a chef, I realised the two of us could set up our own business.
We dreamt and plotted (over many glasses of wine) and took the plunge, setting up Canapé to Cake. After countless weddings we saved enough to also buy our own food truck and named this part of the company Box Fresh Street Food. We started catering festivals, sporting events, private parties and more weddings.
Since then we have taken on several fantastic chefs and front of house team members. We now have the ideal set up for all events.
Have you always had an ambition to work in catering?
As children Lucie and I we were both surrounded by food. I would watch my father cook with fresh new ingredients and that has always inspired what I do. We love coming up with fresh menus and dishes that work alone or together, now we write the recipes down!
It’s a real buzz for us whether it’s a wedding or an outside event. Our food makes people happy and that makes us happy. Canapé to Cake and Box Fresh Street Food have allowed me to hone my cooking skills and do something I’m truly passionate about!
Who makes up the great team of Canape to Cake?
Canapé to Cake consists of Lucie and I, and together we oversee both businesses behind the scenes and at the events.
Our team in the kitchen is fronted by Chef Tim who can just pluck a great recipe from his head, is always calm and never fails to impress us and our clients.
There’s Ali, who taught herself to bake and has her own business focusing on children foods. She knows all about healthy alternatives.
We also have Claire who trained under Prue Leith and spent time in the busy kitchen of Oxford University.
Front of house are a mix of energetic and talented people. Getting a team together over time who you can trust and rely on is key and ours is ﬂexible and highly trained.
Tell us about life before Canape to Cake
I started in a nursing home aged 14 as a kitchen assistant and then worked in various restaurants in Cheltenham before moving from front of house to the kitchen.
In 2006 I moved to Monaco and worked on super yachts for several years, which was an incredible experience, working with incredible ingredients, budgets and the most talented chefs!
I moved home when I met my husband and with motherhood looming I decided I no longer wanted to work for someone else, this is when I met Lucie. Lucie started working in hospitality at 18, first in bars then in restaurants. Her passion for great food and fantastic service saw her excel into management. Lucie had also done event management so knew how to run large scale events. Lucie also dreamt of having her own business, so it all fell into place with Canapé to Cake and then Box Fresh.
What can we expect from The Larder at OBR?
There will be a mixture of old favourites, like our legendary dark chocolate and raspberry brownies, and seasonal specials. We want to offer exciting and interesting options for brunch, lunch and supper that will include a mix of health orientated foods, as well as, delicious naughty treats.
We’re also looking forward to hosting pop up kitchens, bringing in other chefs and cuisines with themed nights and entertainment. We aim to provide something different from the rest and we’re confident we will please all tastes for all occasions whether that’s a relaxed coffee, a family Sunday roast or a private celebratory event. We hope to also offer a takeout service for those who want home cooked food at their own leisure.
As a local company, what do you love most about living/working in Cheltenham?
We both grew up Cheltenham so we love the community and familiar faces. Our loyal customers, family, our fantastic suppliers who,like us, love what they do makes this place special. The diversity and culture are great with access to so many opportunities including the huge amount of festivals of the arts, literature and music. And not to mention the plethora of cracking bars – it’s the place to be!
